Instructions

To get started, preheat your oven to 375°F (190°C). Begin by boiling the pasta sheets in salted water according to package instructions until they become al dente. Drain them well and set aside on a clean dish towel.

While the pasta is cooking, start preparing the filling for the lasagna. In a large skillet over medium heat, sauté your chosen vegetables (mushrooms, zucchini, bell peppers, onions) until they are slightly softened but still firm to the bite. Season these with salt and pepper.

Once the pasta is ready, spread about 1 cup of marinara sauce evenly across the bottom of a large baking dish or casserole pan. Layer three sheets of pasta on top. Cover this layer with half of your sautéed vegetables and sprinkle with one cup each of mozzarella and Parmesan cheeses.

Repeat these steps twice more, ending with another layer of pasta and cheese. Make sure the last layer is entirely covered in marinara sauce. Sprinkle a final layer of Parmesan on top for an extra burst of flavor.
