Quick and Easy One-Pot Pasta Recipe

Ingredients:
- 1 pound (450g) of your favorite pasta, such as penne or fusilli
- 3 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 can (15 ounces/425g) of diced tomatoes
- 1 cup (about 80g) of fresh spinach leaves
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- 2 tablespoons grated Parmesan cheese (optional)
Instructions:
In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until it becomes soft and translucent.
Add the minced garlic to the pot and cook for another minute or so until fragrant but not browned.
Pour in the can of diced tomatoes, stir well, and season with oregano, basil, salt, and pepper. Bring the mixture to a simmer.
Meanwhile, bring a large pot of water to a boil according to pasta package instructions for al dente texture. Once the water is boiling, add your pasta and cook until it reaches the desired doneness.
When the pasta is almost ready, add the fresh spinach leaves into the sauce. Stir gently so that the spinach wilts in the hot sauce. Let it cook together with the pasta for a couple of minutes more to blend flavors fully.
Once the pasta is cooked al dente and the spinach has wilted, remove the pot from heat. If needed, stir in some grated Parmesan cheese. Taste and adjust seasoning if necessary by adding more salt or pepper.
Serve immediately with crusty bread on the side if desired.

- Using fresh spinach instead of frozen will result in a brighter, fresher flavor that pairs perfectly with the other ingredients. However, you can use whatever greens are available to you; arugula or kale would also work beautifully.
- To enhance the dish further, consider adding some cooked shrimp or chicken for extra protein and richness. You could even add a few slices of pancetta for a savory twist.
