Delicious Vegetarian Lasagna Recipe
Looking for a hearty vegetarian lasagna recipe that is sure to become a family favorite? This lasagna is not only delicious but also easy to prepare! Here’s everything you need to know about this classic Italian dish.
Preparation time: 40 minutes; Cooking time: 60-75 minutes; Servings: 8
This vegetarian lasagna uses a combination of pasta, spinach, ricotta cheese, and various other ingredients that will make it a hit at any meal. The key to a great lasagna is having all the ingredients well-prepared before you start cooking so you can focus on assembly without interruptions.
Ingredients
- 12 lasagna noodles (uncooked)
- 4 cups ricotta cheese
- 3 cups grated Parmesan cheese
- 1 large egg, beaten well
- 2 tablespoons butter, melted
- 2 ½ teaspoons salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon dried oregano
- 1 tablespoon garlic powder
- 2 cups shredded mozzarella cheese (for topping)
- 4 cups finely chopped spinach or kale
- 1 jar of marinara sauce (about 3-4 cups)
- 1 cup grated Parmesan cheese for the top layer
- 1/2 cup shredded mozzarella cheese for the top layer
Instructions
Step 1: Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package directions. Drain and set aside.
Step 2: In a large mixing bowl, combine ricotta cheese, Parmesan cheese, beaten egg, melted butter, salt, pepper, oregano, and garlic powder until well mixed.
Step 3: Grease your lasagna pan with some olive oil. Lay two-thirds of the cooked noodles on the bottom of the dish (do not overfill; it should be enough to cover the bottom).
Step 4: Spread half of the marinara sauce evenly over the noodles, followed by one-third of the ricotta cheese mixture, and then a layer of spinach. Sprinkle with a third of the mozzarella and Parmesan cheeses.
Step 5: Repeat layers two more times: spread remaining sauce, then add noodles on top (remaining third), followed by the rest of the ricotta mixture, spinach, and cheeses. Finish by adding another layer of marinara sauce to cover all the layers thoroughly.
Step 6: Sprinkle shredded mozzarella cheese evenly over the lasagna, and then sprinkle Parmesan for extra flavor on top. Bake in preheated oven at 375°F (190°C) for about 60-75 minutes until golden brown.
Step 7: Once done baking, allow the lasagna to sit for a few minutes before slicing and serving hot. Enjoy your delicious homemade vegetarian lasagna!
Tips & Variations
- If you like more vegetables, feel free to add bell peppers or mushrooms. They will enhance the flavor significantly.
- For extra richness, consider adding a slice of prosciutto on top while baking if you prefer ham flavors in your lasagna.
- Avoid overloading each layer; instead, focus on creating distinct layers that complement each other harmoniously for an even better taste experience.
The key to a successful lasagna is ensuring all the elements come together beautifully. This vegetarian version uses fresh ingredients that add depth and flavor. Whether you’re having this during dinner or as part of your lunch, this recipe promises satisfaction every time!
