Delicious Vegan Lentil Soup: A Rich, Creamy Recipe
Vegan Lentil Soup is a hearty, rich, and creamy soup that’s perfect for chilly evenings or even as a light meal throughout the year. This dish not only warms your body but also fills you with nutritious benefits from lentils, which are packed with protein, fiber, and essential minerals like iron.
Ingredients required:
- 1 cup of dried brown lentils
- 2 tablespoons of olive oil or vegetable oil
- 4 cloves garlic, minced
- 1 medium onion, diced finely
- 2 carrots, sliced thinly
- 3 celery stalks, chopped
- 1 cup of low-sodium vegetable broth
- 1 can (15 oz) of coconut milk or regular milk for a less rich version
- Salt to taste
- Paprika to add some color and flavor
- Cayenne pepper, optional, to add heat
- Fresh parsley, chopped, for garnish
- Pepper, freshly ground black pepper
For the preparation:
Rinse the lentils under cold water until they are clean. Then soak them in a bowl of water for at least an hour. Drain and set aside.
In a large pot, heat up the oil over medium heat. Add garlic and onion and sauté until softened (about 3-4 minutes).
Now add your carrots, celery, and drained lentils into the pot. Stir them together to combine and let it cook for about 5 more minutes.
Add in the broth, coconut milk or regular milk, salt, paprika, cayenne pepper (if you like a little heat), and bring everything up to a boil. Lower the heat down to simmer and cover your pot while letting it cook until lentils are soft (about 20-30 minutes).
Once the lentils are tender, remove them from the heat. Use an immersion blender or carefully transfer the contents of the soup into a regular blender in batches (careful not to overflow) and blend it until smooth.
Return the blended soup back to your pot over low heat for a couple more minutes until you have reached the desired temperature. Taste and adjust seasoning if necessary, adding black pepper, salt, and any other spices that may enhance flavor.
Serving size: 4-6 people, cooking time is approximately 30 minutes including preparation.
Vegan Lentil Soup is not only a nutritious dish but also incredibly versatile. You can experiment with adding different vegetables to the mix such as potatoes or zucchini for a variety of flavors and textures. For an even heartier meal, consider serving this soup over a bed of rice or noodles. It’s also great served with crusty bread for dipping.
Health benefits:
- Vegan Lentil Soup is rich in dietary fiber which promotes digestive health and helps prevent constipation. The protein content from the lentils makes it a perfect meal for vegetarians and vegans alike who aim to reduce meat consumption while still getting ample amounts of nutrients.
- The iron found in lentils is crucial for preventing anemia by helping your red blood cells carry oxygen throughout your body, boosting your energy levels. Lentils are also high in antioxidants which help protect the body from oxidative stress and chronic diseases.
Vegan Lentil Soup can be stored in airtight containers in the refrigerator for up to 4 days or frozen for later use. If you decide to freeze it, remember that lentils tend to lose their texture when reheated, so it’s best to freeze only the broth and then add the cooked lentils back into the soup right before serving.
To serve this delightful dish:
Boil some water in a pot. Add salt and pasta or noodles of your choice (spaghetti, fusilli, penne). Cook for 7-8 minutes until al dente according to package instructions.
In the meantime, heat up the Vegan Lentil Soup over low to medium heat on the stove while stirring occasionally so it doesn't stick or burn. It should be ready within about 5-10 minutes after returning from the fridge.
Scoop out generous portions of hot, creamy lentil soup into each bowl and top with freshly chopped parsley. Pair this with a side salad for a complete meal.
